Today I'm sharing one of my very favorite summer treats: Strawberry Vanilla Ice-cream Pops. It's perfect for any weather, but tastes just right when the sun is shining down on you, and the smell of grass is in the air. And it's perfectly good for you because it has strawberries in it, right?
right. Don't get intimidated by the steps and the amount of dirty dishes. These are worth every bit of the mess.
Makes: 14-16 pops
What you'll need:
-1 lb strawberries hulled and halved
-½ cup sugar
-2 teaspoons lemon juice
-2 pints vanilla ice cream
-Popsicle Sticks
-Dixie Cups
1\\ Hull and half your Strawberries. Simply, just cut off the tops and cut it them in half.
2\\ Transfer to a bowl and smash the heck out of them with a potato masher or a fork. It looks a little like a strawberry soup when you're finished.
3\\ Pour your
strawberry soup into a pan and add your lemon juice and sugar. Simmer on medium heat until it thickens a bit.
4\\ Pour
back into bowl and sit in freezer to cool off. This can take anywhere from 20-30 minutes.
5\\ Sit your ice-cream out for about ten minutes to let it soften & then scoop into a large bowl. Now stir it like you've never stirred before! Then store in the fridge until strawberry mixture has cooled. I usually only leave it in for 30-35 minutes.
6\\ After passing your time with boardgames, tumblr, blog surfing, you name it; Take strawberries and ice-cream out. Smooth the ice-cream out on the bottom of the bowl, and pour the strawberry mixture over it. Gently stir together. Things will get very pink and maybe even a little lumpy. This is okay!
7\\ Spoon mixture into individual Dixie cups and set on a large plate or pan that is easy to place/remove from the freezer. Then get rid of a bunch of frozen foods to fit the plate, ans shove it in there.
8\\ After they've been sitting for 20 minutes or so, pull them out to quickly stick the popsicle sticks in. You can try to do it before, but usually that results in sideways sticks.
Leave them in for a couple hours and rip away the cup to taste the creamy deliciousness. I may or may not sneak one each morning for breakfast.
